Today’s recipe is
“GHIOTTA SARDINES’ PIE”
Curiosity:
Sardines are one of the cooked fish in Sicily and our sea is rich. The “Ghiotta” is a sauce that is the basis of many Sicilian preparations made with fried onion, celery, tomato, capers and green olives. In the past the sardines were considered a “poor” fish that was up to the fishermen aboard the trawler.
Ingredients
(for 4 people)
600g of sardines, 100g of flour, 30g of capers, 1/2 onion, 1 celery heart, 2 carrots, 100g of green olives,
1/2 glass of white wine, oil salt, pepper and basil a taste.
Preparation
Dice carrots, celery and olives. Add capers and finely cut onions. Let them cook in a pan for about 6/7 minutes, adding salt, pepper and basil. Sprinkle some flour on a cutting board. Flour the sardines and put them in a baking dish. Cover with cooked vegetables. Continues with another layer like a lasagna and then cover the baking dish with a aluminium foil. Put in preheated oven at 180° for 20 minutes. For those who love the crispness, finish cooking sprinkle the last layer of grated pan and let it forms a light crust that will make even more tasty dish.
